  • 2 eggs (unbeaten)
  • 3/4 c. shortening
  • 1 c. brown sugar (1 c. molasses may be used instead)
  • 3/4 c. white sugar
  • 1 1/4 c. buttermilk
  • 1 1/4 tsp. soda
  • 2 1/2 tsp. baking powder
  • 1 tsp. ginger
  • 4 c. flour (more if needed)

Directions

    Crumble shortening in flour.

    Add other dry ingredients.

    Mix well.

    Add eggs and mix again.

    Add milk and blend well.

    Divide in 5 portions and roll out as for pastry; cut to fit a 9-inch cake pan or heavy skillet.

    Bake at 350° for 10 to 12 minutes.
