- 1 1/2 c. canned applesauce
- 1 c. apple juice
- 2 (1 lb. each) cans Louisiana yams, drained and mashed
- 1/4 c. melted butter or margarine
- 1/2 tsp. nutmeg
- 1 tsp. vanilla
- 2 eggs
- 1 tsp. baking powder
- 1/4 tsp. salt
Directions

1Combine and beat together applesauce, apple juice, yams, butter, nutmeg and vanilla.

2Beat together eggs, baking powder and salt.

3Fold into apple mixture.

4Pour into a 2-quart casserole. Bake in a 350° oven for 1 1/2 hours or until done.

5Makes 6 to 8 servings.
