  • 1 1/2 c. canned applesauce
  • 1 c. apple juice
  • 2 (1 lb. each) cans Louisiana yams, drained and mashed
  • 1/4 c. melted butter or margarine
  • 1/2 tsp. nutmeg
  • 1 tsp. vanilla
  • 2 eggs
  • 1 tsp. baking powder
  • 1/4 tsp. salt

Directions

    Combine and beat together applesauce, apple juice, yams, butter, nutmeg and vanilla.

    Beat together eggs, baking powder and salt.

    Fold into apple mixture.

    Pour into a 2-quart casserole. Bake in a 350° oven for 1 1/2 hours or until done.
