  • pastry dough, for two double crust, nine-inch pies
  • 5 cups tart cooking apples, sliced (4-5 large apples)
  • 23 cup sugar
  • 4 -5 tablespoons enriched flour
  • 12 teaspoon salt
  • 12 teaspoon nutmeg
  • 12 teaspoon grated lemon rind
  • 14 cup molasses
  • 1 tablespoon lemon juice
  • 2 tablespoons butter or 2 tablespoons margarine

    Line 2, 9-inch pie pans with pastry.

    Sprinkle apples with a mixture of sugar, flour, salt, nutmeg and lemon rind.

    Spread in pie shell.

    Pour molasses and lemon juice over apples; dot with butter.

    Cover with remaining pastry.

    Trim, seal and flute edge.

    Bake 10 minutes at 450F then at 350F for 30-40 minutes.
