- 1 can garbanzo beans(chick peas)
- 1/4 cup EVOO extra virgin olive oil
- 4 cloves of fresh garlic
- 4 tbsp. spoons Tahini (sesame paste) ((readily available in natural food
- import markets))
- 1/4 cup fresh lemon juice
- salt and pepper to taste
- cumin to taste (optional)
Directions

1Drain the beans and reserve the liquid in a cup.

2Combine all ingredients in a food processor and puree until creamy.

3You may need to add some of the reserved juice for proper consistency.

4Taste and adjust salt, pepper, lemon or oil.

5To serve: Spread in a shallow plate, drizzle with some EVOO and garnish with minced parsley.

6Serve with pita wedges, pita chips or cut veggies.
