Old World Hummus

Ingredients

  • 1 can garbanzo beans(chick peas)
  • 1/4 cup EVOO extra virgin olive oil
  • 4 cloves of fresh garlic
  • 4 tbsp. spoons Tahini (sesame paste) ((readily available in natural food
  • import markets))
  • 1/4 cup fresh lemon juice
  • salt and pepper to taste
  • cumin to taste (optional)

Directions

    Drain the beans and reserve the liquid in a cup.

    Combine all ingredients in a food processor and puree until creamy.

    You may need to add some of the reserved juice for proper consistency.

    Taste and adjust salt, pepper, lemon or oil.

    To serve: Spread in a shallow plate, drizzle with some EVOO and garnish with minced parsley.

    Serve with pita wedges, pita chips or cut veggies.
