  • 1 c. uncooked rice
  • 2 1/2 c. tomatoes
  • 1 c. water
  • 1 tsp. salt
  • 2/3 c. sliced, stuffed olives
  • 1/4 c. salad oil
  • 1/2 c. minced onions
  • 1 c. grated cheese
  • 1 can cream of mushroom soup

    Combine all ingredients and pour into a greased 1 1/2-quart casserole dish.

    Bake in moderate oven at 350° for about 40 minutes or until rice is tender.

    Toss slightly with a fork several times during the last 15 minutes of cooking or until liquid is almost all absorbed.
