- 1 c. uncooked rice
- 2 1/2 c. tomatoes
- 1 c. water
- 1 tsp. salt
- 2/3 c. sliced, stuffed olives
- 1/4 c. salad oil
- 1/2 c. minced onions
- 1 c. grated cheese
- 1 can cream of mushroom soup
Directions

1Combine all ingredients and pour into a greased 1 1/2-quart casserole dish.

3Bake in moderate oven at 350° for about 40 minutes or until rice is tender.

4Toss slightly with a fork several times during the last 15 minutes of cooking or until liquid is almost all absorbed.
