Olive Polenta

  • 2 cups chicken stock
  • 4 cups milk
  • 2 cups polenta
  • 1/3 cup pitted kalamata olives, coarsely chopped
  • 1/4 cup finely grated Parmesan cheese, plus additional, to serve

Directions

    Bring stock and 3 cups of the milk to a boil in a large saucepan. Gradually add polenta, stirring constantly. Reduce heat to low; simmer, stirring, for 10 mins, or until polenta thickens.

    Stir in remaining 1 cup milk, olives and Parmesan cheese until cheese has melted. Serve topped with additional cheese.
