- 5 large eggs
- 1/3 cup finely shredded sharp cheddar cheese
- 1/3 cup sliced green olives with pimentos
- 1/2 tsp Herbs de Provence
- 2 tbsp water
- 2 tbsp margarine
Directions

1Beat the eggs, set aside.

2Heat the margarine in a large nonstick pan.

3Add eggs let sit 20 seconds add olives.

4Cover with lid.

5After 1 minute add cheese.

6Add water on the edges cover let cook till cheese melts, and eggs cooked on top.

7Tilt pan and gently roll the eggs up.

8Let gravity help in the rolling.

9Cut in half sprinkle tops with Herbs de Provence
