Olives and eggs

Ingredients

  • 5 large eggs
  • 1/3 cup finely shredded sharp cheddar cheese
  • 1/3 cup sliced green olives with pimentos
  • 1/2 tsp Herbs de Provence
  • 2 tbsp water
  • 2 tbsp margarine

Directions

    Beat the eggs, set aside.

    Heat the margarine in a large nonstick pan.

    Add eggs let sit 20 seconds add olives.

    Cover with lid.

    After 1 minute add cheese.

    Add water on the edges cover let cook till cheese melts, and eggs cooked on top.

    Tilt pan and gently roll the eggs up.

    Let gravity help in the rolling.

    Cut in half sprinkle tops with Herbs de Provence
