- whites of six eggs
- yolks of four eggs
- juice of half a lemon or 1 Tbsp. orange flower water or Kirsch
- 4 Tbsp. powdered sugar (white)
Directions

1Grease baking dish with butter.

2Beat the eggs (white) to a stiff froth.

3Beat the yolks and the sugar to a cream, add the lemon juice, orange flower water or Kirsch.

4Add whites of the eggs.

5Stir carefully and heap all quickly into the baking dish and bake about 15 minutes, until top is a delicate brown.

6Serve immediately as it will fall if allowed to stand.

7May serve as a dessert.
