- 4 eggs, separated
- 1/2 c. sugar
- 3 Tbsp. flour
- 2 Tbsp. butter
Directions

1Beat egg yolks until thick and lemon colored.

2Gradually add sugar, then flour.

3Mix well.

4Beat egg whites stiff and gently fold into yolk mixture.

5Heat butter in skillet.

6Let it cover all of skillet and be very hot.

7Pour the omelet mix and bake in 325° oven for 20 minutes.

8The omelet should slide out easily by tipping the skillet.

9Serve with peaches, apricots, or your choice.
