  • 1 c. Minute rice
  • 3 Tbsp. flour
  • 1 tsp. chili powder
  • 1 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 2 Tbsp. butter
  • 1 lb. ground beef
  • 2 Tbsp. onions
  • 1 (17 oz.) tomatoes
  • 1 can whole kernel corn

Directions

    Grease a 2-quart casserole. Spread rice on bottom.

    Mix flour, chili powder, salt and pepper.

    Spread over rice.

    Dot with 1/2 tablespoon butter.

    Mix beef and onions and put over rice. Repeat. Pour over the layers the tomatoes with liquid. Spread corn on top and dot with butter. Bake at 350° for 45 to 50 minutes. Serves 6.
