One-Pan Tomato Basil Chicken

  • 1 (6.9 oz.) pkg. Rice-A-Roni chicken flavor
  • 1 lb. boneless, skinless chicken breast (about 4 halves), chopped
  • 2 c. broccoli flowerets
  • 1 medium tomato, chopped
  • 1 tsp. dried basil
  • 1 c. (4 oz.) shredded Mozzarella cheese (optional)

Directions

    In a large skillet, saute rice-vermicelli mix as the package directs.

    Stir in 2 cups water, chicken and contents of seasoning packet.

    Bring to boil over high heat.

    Cover; reduce heat to low. Simmer 10 minutes.

    Stir in broccoli, tomato and basil.

    Cover; simmer 5 to 10 minutes or until most of liquid is absorbed. Sprinkle with cheese, if desired.
