- 1 slice Sandwich Ham
- 2 Tablespoons Pico De Gallo
- 1 teaspoon Butter
- Salt And Pepper, to taste
- 1 whole Egg
- 2 Tablespoons Grated Monterey Jack Cheese
- 2 Tablespoons Sour Cream
- 1 Tablespoon Salsa

1Grease a muffin tin and line each cup with a slice or two of ham, with the ham extending above the edges. Scoop in the pico de gallo until the cup is half full. Add a little pat of butter and some salt and pepper to taste. Crack an egg on top and lightly poke it down into the veggies. Put a mound of grated cheese on top (I like Monterey Jack).

2Bake in a preheated oven at 400 degrees for around 20 minutes, or until the top expands like a muffin. Let the ham cups sit for a couple of minutes before removing to a serving dish.

3Serve with salsa and sour cream.
