Ingredients

  • 2 tsp olive oil
  • 2 strips Canadian bacon
  • 6 None cherry tomatoes
  • 3/4 cup baby spinach
  • 2 tbsp butter
  • 4 None large eggs
  • None None Toast, to serve

Directions

    Divide the oil between 2 small frying pans and place each over medium heat.

    Add a strip of bacon to each pan and cook until the bacon is crisp. Remove and set aside. Add half the tomatoes to each pan and cook for 2 mins, or until they start to soften. Add the spinach and cook until wilted.

    Return the bacon to the pan and add the butter.

    Beat the eggs together, pour between the pans and cook for 2 mins. Finish cooking under a hot broiler for 1 min. Season to taste and serve hot with buttered toast.
