- 1 large Vidalia or sweet onion
- 2 Tbsp. flour
- 1 egg, lightly beaten
- 1 c. crackers
- vegetable oil
- 1/2 tsp. salt (optional)
- dark honey mustard or Ranch dressing
Directions

1Peel onion, leaving root intact.

2Cut vertically in quarters to within 1/2-inch of root.

3Cut each quarter in thirds.

4Place onion in boiling water 1 minute, then place in ice water for 5 minutes.

5Loosen petals. Drain, cut side down.

6Place flour in zip-top bag.

7Add onion and shake to coat.

8Dip onion in egg. Place cracker crumbs in bag.

9Add onion.

10Toss to coat.

11Chill 1 hour.

12Pour oil to depth of 3-inches in electric fryer or saucepan. Heat to 375°.

13Fry onion 5 to 7 minutes or until brown. Drain on paper towels.

14Sprinkle with salt. Serve with honey mustard or Ranch-style dressing.
