- 1 large sweet onion
- 1/4 c. butter or margarine
- 1 (8 1/2 oz.) corn muffin mix
- 1/3 c. milk
- 1 egg, beaten
- 1 small can cream-style corn
- 1 c. sour cream
- 1/4 tsp. salt
- 1 1/2 c. sharp Cheddar cheese, grated
Directions

1Peel and slice onion.

2Cook in butter until tender.

3In a bowl, combine muffin mix, egg, milk and corn.

4Turn this into a greased 8-inch square pan.

5When onion is tender, add sour cream, salt and 1/2 cup cheese to it.

6Spread this mixture over batter. Sprinkle with remaining cheese.

7Bake at 425° for 25 to 30 minutes.

8Cut into squares and serve warm.

9Makes about 6 to 8 servings.
