  • 1 onion
  • 1 c. uncooked rice (any type except precooked or Minute rice)
  • 2 Tbsp. vegetable oil
  • 2 c. canned chicken broth
  • 1/4 tsp. salt
  • pepper to taste

    Remove the outer layers from onion and chop into small pieces. Heat oil in skillet and saut onion on medium heat

    until soft. Add 1 cup uncooked rice and continue sauteing until the rice begins to brown, stirring constantly (about 10 minutes). Be careful it doesn't burn. Quickly add chicken broth, salt and pepper; reduce heat to simmer. Cover and cook for about 20 minutes. Makes 4 to 6 servings.
