  • 3 pounds Boneless, Skinless Chicken Breasts, Cooked And Cut Into Chunks (See Note Below)
  • 1 can Cream Of Chicken Soup (10 3/4 Oz.)
  • 8 ounces, weight Sour Cream
  • 1/2 packages (1 Sleeve) Onion Flavored Crackers (like Keebler Toasteds)
  • 1/4 cups Butter, Melted (1/2 Stick)
  • Cooking Spray

Directions

    (*Note: To cook chicken for this recipe, I put the chicken in a jelly roll pan, rub chicken with olive oil and sprinkle with Kosher salt and fresh ground pepper.

    Cover tightly with foil and bake 350 degrees for 30 minutes.

    Let sit covered for 5 minutes longer.

    Uncover and cool for 5 minutes or until you can handle it to cut up.

    You could also poach the chicken instead.)

    Place cooked chicken chunks in a 9 x 13 baking dish sprayed with cooking spray.

    Mix cream of chicken soup with sour cream and pour over chicken.

    Bake for 1/2 hour, uncovered.

    Crush up 1 sleeve of crackers and mix with melted butter.

    Sprinkle on top of chicken.

    Bake another 1/2 hour, uncovered.
