- 2 yellow onions medium-sized, diced
- 1/2 tablespoon butter light
- 1/2 teaspoon paprika
- 1 pinch salt
- 1/2 teaspoon dijon mustard
- 1/2 teaspoon balsamic vinegar
- 3 tablespoons cream cheese at room temperature
- 1/4 cup light sour cream
- 1/4 cup light mayonnaise
Directions

1Saute the onion in the butter at medium-high heat together with the paprika and salt. Cook, stirring constantly, for 10 minutes.

2Reduce the heat to low and cook for 25 minutes more, stirring occasionally until the onions are dark and caramelized. Add the mustard and vinegar and cook for 2 minutes, stirring constantly. Remove from heat and let cool completely.

3Mix the cream cheese and mayonnaise together in a separate bowl. Add the onions.

4Cover with plastic wrap and refrigerate overnight. Serve at room temperature.
