- 4 qt. Vidalia onions, peeled and sliced
- 1/3 c. salt
- 3 1/2 c. sugar
- 1 1/2 tsp. turmeric
- 1 1/2 tsp. celery seed
- 3 1/2 c. vinegar
- 2 tsp. pickling spice
Directions

1Peel onions; slice and sprinkle with salt.

2Cover with ice and let stand for 3 hours; drain well.

3Put in medium pot and mix with all other ingredients in large bowl.

4Mix well.

5Pour over onions and heat to boiling.

6Boil 1 minute.

7Place in jars and seal.

8Makes 6 to 8 pints.
