Ingredients

  • 2 lb. Vidalia or Spanish onions, sliced or separated into rings
  • 3 Tbsp. melted butter or margarine
  • 3 eggs, well beaten
  • 1 c. sour cream
  • 1/4 tsp. salt
  • 1/2 tsp. white pepper
  • dash of Tabasco
  • 1 (9-inch) pie shell (unbaked)
  • Parmesan cheese

Directions

    Preheat oven to 450°.

    Saute onions in butter in large skillet over medium heat until tender.

    Cool.

    Combine eggs, sour cream, salt, pepper and Tabasco.

    Add to onions.

    Pour into pie shell. Sprinkle with cheese.

    Bake in oven at 450° for 15 minutes. Reduce temperature to 325° and continue baking 10 to 15 minutes or until knife inserted near center comes out clean.
