  • 1 tablespoon olive oil
  • 2 yellow onions sliced
  • salt
  • ground black pepper
  • 1 clove garlic chopped
  • 1 teaspoon fresh rosemary chopped
  • 2 whole wheat pita breads
  • 5 1/3 tablespoons feta cheese or goat cheese
  • 1/2 cup manchego cheese grated
  • 6 black olives sliced

Directions

    Preheat the oven to 200 degrees Celsius.

    Heat the olive oil in a hot saucepan. Saute the onions for 15 minutes until golden brown, stirring occasionally. Season with salt and pepper to taste.

    Add the garlic and rosemary, then cook for 1 more minute. Remove from the stove.

    Warm the pita breads. Add the onion mix, cheeses, and olives on top.

    Bake at 200 C for 10 minutes, or until the cheese melts.
