  • 2 medium baking potatoes, peeled and thinly sliced (2 1/2 c.)
  • 3 medium onions, thinly sliced
  • salt to taste
  • pepper to taste
  • 1/2 c. skim milk
  • 2 Tbsp. chopped pimiento
  • 2 Tbsp. snipped parsley or dried parsley
  • 2 oz. process Swiss cheese, shredded (1/2 c.)

Directions

    Layer half the potatoes and half the onions in a greased 10 x 6 x 1 3/4-inch baking dish.

    Sprinkle generously with salt and pepper.

    Combine milk, pimiento and parsley; spoon half the mixture over onion-potato layer; repeat layers.
