  • 3 or 4 Spanish or Bermuda onions
  • 2 to 3 c. buttermilk or ice water
  • 1 egg, beaten
  • 1 tsp. salt
  • 1 1/2 tsp. baking powder
  • 2/3 c. water
  • 1 c. all-purpose flour
  • 1 Tbsp. salad oil
  • 1 tsp. lemon juice
  • 1/4 tsp. cayenne pepper

    Peel onions and slice about 3/8-inch thick.

    Separate into rings.

    Pour buttermilk into a shallow pan.

    Add onion rings and allow to soak 30 minutes.

    Combine egg, salt, baking powder, water, flour, 1 tablespoon salad oil, lemon juice and cayenne pepper.
