- 3 large sweet onions, chopped
- 2 garlic cloves, pressed
- 1 teaspoon salt
- 2 tablespoons olive oil
- 1 (16-ounce) package Arborio rice
- 8 cups chicken broth, warmed
- 1 cup dry white wine
- 1/2 cup shredded Parmesan cheese
- 2 tablespoons butter or margarine
Directions

1Saute first 3 ingredients in hot oil in a Dutch oven over medium-high heat until tender.

2Add rice; cook, stirring constantly, 2 minutes. Reduce heat to medium; add 1 cup broth. Cook, stirring often, until liquid is absorbed.

3Repeat procedure with remaining chicken broth, 1 cup at a time. (Cooking time for the rice mixture is about 30 minutes.)

4Add wine; cook, stirring gently, until liquid is absorbed. Stir in cheese and butter. Serve immediately.
