  • 2 large onions, thinly sliced
  • 1/2 c. margarine or butter
  • 1/8 tsp. salt
  • 8 oz. grated Cheddar cheese, divided in half
  • 1/2 tsp. dill weed
  • 8 oz. sour cream
  • 1 Jiffy corn muffin mix
  • 15 oz. creamed corn (undrained)
  • hot sauce to taste (4 to 15 squirts)
  • 1 egg
  • 1/3 c. milk

Directions

    Saute onion in margarine and cool. Add sour cream, salt, dill weed and half of cheese. Mix muffin mix with corn, egg and milk. Pour in 13 x 9-inch cake pan, then onion mixture, then top with last half of shredded cheese. Bake at 425° for 30 to 40 minutes.
