  • 1 large sweet onion, chopped
  • 1/4 c. oleo
  • 1 1/2 c. Jiffy corn muffin mix
  • 1 egg
  • 1/3 c. milk
  • 1 c. creamed corn
  • 1 c. sour cream
  • 1 c. sharp cheese, shredded

Directions

    Saute onion in oleo until tender.

    Add sour cream and 1/2 cup cheese to onion after removing from stove.

    Blend muffin mix, egg, milk and corn; don't beat, just mix.

    Put batter in 9 x 9-inch buttered pan, spread onion mixture over batter and top with 1/2 cup shredded cheese.

    Bake at 350° until lightly browned, about 25 minutes.
