  • 2 lb. onions
  • 1/2 small head cabbage
  • 4 Tbsp. oleo
  • 1 Tbsp. flour
  • 1/4 tsp. salt
  • 2 cans beef broth (14 oz.)
  • 1/4 c. dry sherry
  • 4 (3/4-inch) slices Italian bread
  • shredded Cheddar cheese

Directions

    Slice onions and cabbage.

    Brown both in oleo.

    Cook until tender.

    Add flour, broth and sherry.

    Simmer.

    Slice bread in 3/4-inch slices.

    Toast slices in jelly roll pan at 450°.

    Place toast on soup in oven-safe bowls.

    Sprinkle cheese over bread. Place bowls on pan in 450° oven for 20 minutes.
