- 1/2 c. butter
- 3 lb. onions, thinly sliced
- 1 to 1 1/2 tsp. paprika
- 3/4 c. flour
- 1/2 c. salad oil
- 3/4 tsp. celery salt
- salt and pepper to taste
- 6 c. beef stock
- 1 (12 oz.) bottle dark beer
Directions

1Melt butter.

2Add onions.

3Cook over low heat until onions are soft.

4Add paprika.

5Make roux by browning the oil and the flour mix, being certain it is evenly browned.

6Add the onions, roux, celery salt, salt and pepper to beef stock and stir until it boils.

7Let simmer for at least 2 hours.

8Add beer.
