- 3 onions, sliced thin (vidalia for sweeter preference)
- 2 tablespoons olive oil
- 2 tablespoons butter
- 2 sprigs thyme
- 8 ounces frozen puff pastry (I used Pepperidge farm)
- 5 ounces soft fresh goat cheese
- 1 teaspoon fresh ground black pepper
Directions

1Preheat oven to 400F.

2Heat a pan over low heat.

3Melt the butter and olive oil.

4Place sliced onion, cook and caramelize for 15 - 20 minutes until they turn golden brown.

5Rolled out the puff pastry and place it on top of a cookie sheet.

6Spread the softened goat cheese and top with black pepper.

7Spoon the caramelized onion over the goat's cheese.

8Bake for 20 minutes or until the pastry is puffed and golden.
