Orange Beets with Spice

- 2 pounds beets young, small
- 2 teaspoons cornstarch
- 1/4 teaspoon salt
- 1/4 teaspoon allspice ground
- 18 teaspoon black pepper
- 1 tablespoon oranges rind, grated
- 1/4 cup sugar brown
- 23 cups oranges juice
- 2 tablespoons butter
- 1 x chives fresh, minced
Directions

1Cut off beet tops and wash beets well.

2Simmer beets, covered, in enough water to cover for 45 to 60 minutes or until tender.

3Drain and cover with cold water; trim off tops and roots and remove skin.

4Slice 1/4 inch thick and set aside.

5In medium saucepan, combine cornstarch, salt, allspice, pepper, orange rind, and brown sugar.

6Gradually add orange juice, stir until smooth.

7Add butter.

8Cook and stir over medium heat until mixture thickens.

9Add beets and heat through.

10Place in individual serving dishes and sprinkle with chives.
