Smoked whitefish risotto

  • 2 tsp. oil
  • 1 to 2 onions
  • 1 tsp. curry
  • 1 cup rice, uncooked
  • 2 cups Homemade Salmon Broth
  • 1/2 lb. smoked whitefish, chopped
  • 2 tbsp. fresh parsley
  • dill
  • 1 hard-boiled egg, sliced

Directions

    Saute onion in oil about 2 minutes.

    Add curry and mix well.
  3. 3
    Add rice and broth and heat up until it boils.
  4. 4
    Reduce heat and cook covered about 20 minutes until the liquid is absorbed and the rice is done.

    Add fish, parsley or dill and heat up if needed.

    Garnish with egg slices before serving.
