- 2 cups low fat cottage cheese
- 34 cup egg substitute (like Egg Beaters)
- 2 tablespoons all-purpose flour
- 23 cup sugar
- 1 teaspoon orange rind, freshly grated
- 1 tablespoon orange juice
- 1 tablespoon orange extract
- orange slice, garnish
- 1 9-inch deep dish pie crust, thawed if using frozen shell
Directions

1Preheat oven to 350 F.

2In large bowl, beat cottage cheese on high speed with electric mixer for 1-1/2 minutes.

3Add eggs, sugar, flour, grated orange, orange juice, and orange extract; blend well.

4Pour into pie shell and bake for 50 minutes, or until a knife inserted comes out clean.

5Refrigerate overnight and serve chilled the next morning garnished with orange slices.
