  • 12 cup currants or 12 cup raisins
  • 1 12 cups all-purpose flour
  • 34 cup whole wheat flour
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking soda
  • 12 teaspoon salt
  • 14 teaspoon nutmeg
  • 1 cup unsalted butter, room temperature
  • 1 cup light-brown sugar
  • 2 eggs
  • 1 tablespoon grated orange zest
  • 2 cups grated carrots

    Cover currants with boiling water and let sit for 5-10 minutes; drain off water.
