Orange-Date Nut Bread

- 6 oz. chopped dates
- 1/2 c. boiling water
- 1 tsp. oleo
- 1 egg
- 1/4 c. sugar
- 1/2 c. orange juice concentrate, thawed
- 1 1/2 c. flour
- 1 tsp. baking soda
- 2 1/2 oz. chopped walnuts
Directions

1Pour boiling water over dates. Stir until lukewarm.

2Beat in by hand the oleo, egg, sugar and orange juice concentrate. Sift together dry ingredients, except nuts.

3Fold dry ingredients into date mixture.

4Add nuts and blend through.

5Pour into a 9 x 5-inch loaf pan that has been sprayed with a nonstick spray and bake in a preheated 350° oven for 45 to 55 minutes or until toothpick inserted in loaf comes out clean. Cool in pan for 5 minutes. Turn out onto rack and cool completely.
