Orange Date Nut Cake

  • 1 c. butter
  • 2 c. white sugar
  • 4 eggs
  • 1 1/2 c. buttermilk
  • 1 tsp. baking soda
  • 4 c. sifted plain flour
  • 4 Tbsp. grated orange rind
  • 1 lb. dates, chopped fine
  • 1 c. nuts, chopped

    Cream butter and sugar.

    Add eggs, one at a time, beating between each addition.

    Dissolve and stir soda in buttermilk. Alternate adding flour and buttermilk mixture.

    Add rind, dates and nuts.

    Bake in tiny buttered muffin tins at 325° for approximately 20 minutes, or bake in greased and floured tube pan until a toothpick inserted into middle of cake comes out clean. While still hot, spoon over the glaze.
