- 1 1/2 c. sugar
- 9 eggs
- 1 c. cake flour
- 1 tsp. cream of tartar
- rind of 1 orange, grated
- 1/3 c. orange juice
- 1/4 tsp. salt
Directions

1Separate eggs; beat yolks until lemon colored.

2Add rind and orange and salt.

3Add flour and 1/2 cup of the sugar, sifted together 3 times.

4Beat egg whites until frosty.

5Add cream of tartar and remaining salt and sugar and beat until it looks like frosting.

6Then fold the yellow part into the white and put in angel food pan.

7Bake at 325° for 1 hour.

8Invert after taking out of oven until cool.
