Orange-Ginger Chicken

  • 5 lb. chicken thighs, skinned
  • 4 tsp. soy sauce (lite)
  • 2 tsp. ginger
  • 1/3 c. I Can't Believe It's Not Butter, melted
  • 1 c. frozen orange juice concentrate, thawed
  • 1/4 tsp. black pepper
  • 1 tsp. salt (optional; may use salt substitute if desired)

Directions

    Combine salt, pepper, orange juice concentrate, butter, ginger and soy sauce.

    Grease two 11 x 7-inch baking dishes lightly with vegetable oil or a cooking spray. Place chicken in single layer in the dish and baste well with sauce.

    Cover and refrigerate overnight.

    Bake, uncovered, at 350° for about 1 hour, basting with sauce during cooking.
