- 5 lb. chicken thighs, skinned
- 4 tsp. soy sauce (lite)
- 2 tsp. ginger
- 1/3 c. I Can't Believe It's Not Butter, melted
- 1 c. frozen orange juice concentrate, thawed
- 1/4 tsp. black pepper
- 1 tsp. salt (optional; may use salt substitute if desired)
Directions

1Combine salt, pepper, orange juice concentrate, butter, ginger and soy sauce.

2Grease two 11 x 7-inch baking dishes lightly with vegetable oil or a cooking spray. Place chicken in single layer in the dish and baste well with sauce.

3Cover and refrigerate overnight.

4Bake, uncovered, at 350° for about 1 hour, basting with sauce during cooking.
