Orange Meringue Rice Pudding

Ingredients
- 2 c. milk
- 1/3 c. long grain rice
- 2 beaten egg yolks
- 2 Tbsp. vanilla
- dash of salt
- 2 egg whites
- 3 Tbsp. sugar
- orange marmalade
Directions

1In heavy saucepan, combine milk and rice.

2Bring to boiling. Reduce heat, cover and cook over low heat, about 15 minutes or until rice is tender.

3Remove from heat.

4Gradually stir in 1 cup of hot rice mixture into beaten egg yolk.

5Return all to saucepan. Stir in orange marmalade to taste, vanilla and salt.

6Pour rice mixture into 8 x 6 1/2 x 2-inch baking dish.

7Bake, uncovered, in a 350° oven for 12 minutes.

8Remove from oven, stir rice mixture well.
