Orange Molded Salad

Ingredients

  • 1 ( 3 oz.) pkg. orange Jell-O
  • 1 (3 oz.) cream cheese, softened
  • 1 can (8 1/2 oz.) crushed pineapple, drain and save juice
  • 1/2 pt. heavy cream, whip (don't add sugar)
  • 1 large carrot, grated

Directions

    Add enough water to pineapple juice to equal 1 cup.

    Boil and pour over Jell-O and cream cheese in small bowl.

    Beat with electric beater until Jell-O dissolves and cream cheese is blended. Cool in refrigerator while grating carrot and whipping cream.

    Fold pineapple into cooled mixture.

    Fold in whipped cream and carrot. Pour into 2-quart mold.

    Refrigerate until set; overnight preferred.

    Serves 12 to 14.
