- 4 or 5 medium oranges (navel best)
- 1 pt. scalded milk
- 1/2 c. sugar
- 3 Tbsp. flour or cornstarch
- 2 egg yolks
- pinch of salt
- 2 egg whites
- 2 to 3 Tbsp. sugar
- 1 Tbsp. water
Directions

1Cut oranges into 2-quart casserole.

2Sprinkle with a little sugar.

3Mix the 1/2 cup sugar, cornstarch and salt.

4Stir into beaten egg yolks and beat until runny.

5Pour a little scalded milk over egg mix.

6Add egg mix to remainder of milk and cook in double boiler until thick.

7Pour over oranges.

8Beat egg whites, adding 2 to 3 tablespoons of sugar and water a little at a time, until stiff.

9Spread on custard and bake in 350° oven for 10 to 15 minutes.
