- 1 c. uncooked regular rice
- 3/4 c. chopped celery
- 1 Tbsp. chopped onion
- vegetable cooking spray
- 2 c. orange juice
- 2 tsp. grated orange rind
- 1/2 tsp. salt
Directions

1Coat a large skillet with vegetable cooking spray and place over medium heat until hot.

2Add rice, celery and onion.

3Cook, stirring occasionally, until rice is lightly browned.

4Add remaining ingredients and bring to a boil.

5Pour mixture into a 1 1/2-quart casserole.

6Cover and bake at 350° for 25 to 30 minutes or until done.
