Orange Spiced Duck

  • 1 (4 lb) whole duck
  • 1/2 None orange, cut into 6 wedges
  • 1/2 None red onion, cut into 6 wedges
  • 3 None star anise
  • 1 None cinnamon stick, broken
  • 1/2 tsp Chinese five-spice powder

Directions

    Preheat oven to 400°F. Fill duck cavity with orange wedges, onion wedges, star anise and cinnamon. Secure opening with a skewer. Tie legs together with butcher's twine.

    Rub five-spice mixture over duck skin. Prick all over with a skewer or knife tip then place on a wire rack set in a large roasting pan.

    Bake for 1 hour 30 mins, or until cooked through. Let rest, covered, for 10 mins before carving.
