- 2 Tbsp. oil
- 1 eggplant, washed, sliced thin
- 1/2 green pepper, chopped
- 4 to 5 tomatoes, ripe
- salt and pepper to taste
Directions

1Saute eggplant in oil; add green peppers and cook about 10 minutes.

2Cut up tomatoes and add to eggplant mixture.

3Cook until all ingredients are soft.

4Serve hot as a vegetable, or cold on crackers or dark bread as an hors d'oeuvre.
