Oriental Fried Rice

  • 2 Tbsp. peanut oil
  • 3 to 4 eggs, lightly beaten
  • 1/4 c. peanut oil
  • 3 to 4 c. steamed short grain rice
  • 4 to 6 green onions, sliced
  • 1 tsp. grated fresh ginger
  • 1 to 1 1/4 c. leftover baked ham, cubed
  • fresh pea pods (optional)
  • 1/4 c. or less soy sauce

    Heat 2 tablespoons peanut oil in wok on high.

    Lightly beat eggs and slowly pour into hot oil.

    Swirl the wok until egg sets. Remove from wok and put on cutting board.

    Put 1/4 cup peanut oil in wok and heat to high.

    Add cooked rice and stir-fry until heated through.

    Add onions, ham, ginger and pea pods.

    Slice the cooked eggs after slicing them into 3-inch long strips and add to rice mixture.

    Add soy sauce a small amount at a time to desired taste.
