Ingredients
- 2 Tbsp. peanut oil
- 3 to 4 eggs, lightly beaten
- 1/4 c. peanut oil
- 3 to 4 c. steamed short grain rice
- 4 to 6 green onions, sliced
- 1 tsp. grated fresh ginger
- 1 to 1 1/4 c. leftover baked ham, cubed
- fresh pea pods (optional)
- 1/4 c. or less soy sauce
Directions

1Heat 2 tablespoons peanut oil in wok on high.

2Lightly beat eggs and slowly pour into hot oil.

3Swirl the wok until egg sets. Remove from wok and put on cutting board.

4Put 1/4 cup peanut oil in wok and heat to high.

5Add cooked rice and stir-fry until heated through.

6Add onions, ham, ginger and pea pods.

7Slice the cooked eggs after slicing them into 3-inch long strips and add to rice mixture.

8Add soy sauce a small amount at a time to desired taste.
