Ingredients

  • 1 md. onion, coarsely chopped
  • 1 md. green pepper, coarsely chopped
  • 6 stalks celery, chopped
  • 1 tsp. olive oil
  • 6 cups chicken broth
  • 1 cup tomato puree
  • 4 bay leaves
  • 1/8 tsp. marjoram
  • 1/8 tsp. thyme
  • 1/2 tsp. basil
  • 4 juniper berries, crushed
  • 3 cups sliced okra
  • 1 clove garlic, crushed
  • 2 tbsp. sugar
  • 1 to 2 dash Tabasco sauce
  • 2 to 3 tbsp. burgundy
  • 1 cup heavy cream
  • Salt, to taste
  • 1 tbsp. butter

Directions

    Saute onion, green pepper and celery butter olive oil until onion is transparent.

    Add chicken broth, tomato puree, bay leaves, marjoram, thyme, basil and juniper berries.

    Simmer cover about 30 minutes.

    Add sliced okra, garlic, sugar and Tabasco sauce.

    Simmer 15 minutes.

    Add wine, heavy cream and salt to taste.

    Remove bay leaves before serving.
