Ingredients

  • 1 box of Orzo (preferably Barillia)
  • 1 Large red peper
  • 1 large yellow peper
  • 1 med red onion
  • 2 cups of black beans(drained and rinsed)
  • 2 cups of either good quality canned, frozen or freash nibblet crisp corn
  • 2 stalks of lovage with leaves diced (used diced celery with leaves if no lovage is avail)
  • 4 Tbsp of freash cilantro
  • 1 bottle 12 oz of Tequilla Lime dressing/marinade there are many brands avail.
  • 1/3 cup of olive oil as needed
  • 1/4 cup(scant) of apple cider vinegar
  • 1 & 1/2 cup of diced peper jack cheese
  • Salt and fresh ground pepper to taste
