Orzo Salad

Ingredients

  • 1 packet instant bouillon
  • 1 lb. orzo pasta
  • 1 green pepper, diced
  • 1 yellow pepper, diced
  • 1 red pepper, diced
  • 1 c. currants
  • 4 Tbsp. balsamic vinegar
  • 2 tsp. Dijon mustard
  • 1/2 c. olive oil

Directions

    Cook orzo pasta in water with bouillon for approximately 8 minutes or until tender, but firm.

    Drain well.

    Whisk together vinegar, mustard and oil, adding the oil a few drops at a time. Toss orzo with the dressing.

    Add diced peppers and currants.
