- 1 packet instant bouillon
- 1 lb. orzo pasta
- 1 green pepper, diced
- 1 yellow pepper, diced
- 1 red pepper, diced
- 1 c. currants
- 4 Tbsp. balsamic vinegar
- 2 tsp. Dijon mustard
- 1/2 c. olive oil
Directions

1Cook orzo pasta in water with bouillon for approximately 8 minutes or until tender, but firm.

2Drain well.

3Whisk together vinegar, mustard and oil, adding the oil a few drops at a time. Toss orzo with the dressing.

4Add diced peppers and currants.
