- 1 cup Whole Wheat Orzo
- 1 cup Canned Chickpeas, Drained And Rinsed
- 1 cup Baby Spinach Leaves, Chopped
- 1/2 cups Crumbled Feta Cheese
- 1/4 cups Dried Currants
- 2 Tablespoons Olive Oil
- 1/2 teaspoons Kosher Salt
- 1/4 teaspoons Freshly Ground Black Pepper
- 4 whole Bell Peppers

2Preheat the oven to 400 degrees F. Bring a large pot of salted water to a boil.

3Add the orzo and cook for 4 minutes.

4Drain the orzo and transfer to a large bowl.

5Add the chickpeas, spinach, feta, currants, olive oil, salt, and pepper and toss to combine.

7Slice the tops off the peppers and remove the ribs and seeds.

8Cut a thin slice from the bottom of the pepper so that it stands up straight (but dont cut through the bottom).

9Spoon the filling into the peppers and transfer to an 8-inch square baking dish.

10Fill the dish with about 1 inch of hot water.

11Bake for about 45 minutes, until the peppers are tender.
