  • 12 - 16 firm, ripe plum tomatoes
  • 1 medium red onion, small dice
  • 2 jalapeno peppers, seeds and ribs removed, small dice
  • 1 cup cooked orzo, cooled
  • 1 - 2 cloves garlic, chopped
  • juice of 1 lime
  • 1 1/2 tbsp. olive oil
  • 1 tsp. dried or 2 tbsp. fresh cilantro
  • 3/4 tsp. kosher salt
  • 1/4 tsp. freshly ground pepper
  • 1/8 tsp. chili powder
  • 1 tbsp. red wine vinegar
  • 1/2 tsp. oregano

    Prepare tomatoes by removing tops by removing ribs and seeds and cutting into small dice. Combine remainder of ingredients. Refrigerate at least 1 hour before serving.
