- 12 - 16 firm, ripe plum tomatoes
- 1 medium red onion, small dice
- 2 jalapeno peppers, seeds and ribs removed, small dice
- 1 cup cooked orzo, cooled
- 1 - 2 cloves garlic, chopped
- juice of 1 lime
- 1 1/2 tbsp. olive oil
- 1 tsp. dried or 2 tbsp. fresh cilantro
- 3/4 tsp. kosher salt
- 1/4 tsp. freshly ground pepper
- 1/8 tsp. chili powder
- 1 tbsp. red wine vinegar
- 1/2 tsp. oregano
Directions

1Prepare tomatoes by removing tops by removing ribs and seeds and cutting into small dice. Combine remainder of ingredients. Refrigerate at least 1 hour before serving.
