Ingredients

  • 1 gal. whole milk (preferably unpasteurized)
  • 8 whole eggs or 6 yolks and 5 eggs
  • 2 c. sugar or less
  • pinch of salt
  • vanilla to taste
  • nutmeg to taste

Directions

    Scald milk over medium-low heat in a heavy bottom saucepan. Keep milk under boiling stage, stirring so as not to stick.

    Mix slightly beaten eggs, sugar and salt.

    Add half cup of hot liquid to egg mixture.

    Stir.

    Keep repeating until 2 to 3 cups milk have been used.

    Stir into the remaining hot milk and heat slowly using a wooden spoon to constantly stir.

    Heat just until mixture coats spoon.

    Don't let it boil for it will curdle!

    If curdling does occur, beat with an eggbeater.

    Cool.

    Add vanilla to taste.

    Serve in punch cups with a bit of nutmeg and a dollop of whipped cream on top.
